Iodine

odine is one of the most important element required for the production of thyroid hormones. the thyroid hormones are one of the most important metabolic hormones produced in the body.

iodine has largely been deficient in the northern india especially the sub-himalayan region. therefore there was a time when the hypothyroidism and goiter were most commonly seen in this region.

hypothyroidism can cause many problems. some noteworthy problems are myxedema coma and cretinism. the latter affects the children due to the involvement of hypothyroidism in mother and child.

and the important fact remains that very small amount of iodine is needed in the body per day. chiefly because iodine in the body is largely recycled.

another important fact is that most of the salts in the body are iodinized. and this is supposed to reduce the incidence of iodine deficiency. but the fact remains that the salt that you add during cooking and heating looses its iodine. iodine has very low boiling point and the average cooking evaporates the iodine.the best iodine absorption is from the salt added on top.

the iodine is absorbed very very fast.

Rock salt is generally not used for cooking.Iodised salt as many cooks recommend should be added only at the final stage as it only adds to the taste as has nothing to do with being cooked like other masalas more  
You can use the same iodinated salt in cooking. rock salt is not purified and may contain a lot more than just sodium chloride. a little salt in not so hot cooking will suffice for daily iodine needs more  
So we should use rock salt for cooking and iodine salt in unheated uncooked dished more  
some salt is always added in food. might as well add it as a time such that the iodine is retained. besides there are always foods that are not heated, like the curds. that amount of iodine is enough. as i said, iodine is recycled in the body more  
Thus better to add salt after cooking. more
