The best test of milk is make curd, if curd formation is good, the quality of milk is good, which brand and packing are you buying. It is now a common secret that earlier blotting paper was used to pass it off as malai by the hot milk vends who cater to the exercise enthusiasts. The same goes in Lassi too where after filling up the glass, a small layer of malai is added and rose syrup to top it up. I would go with Sanjay Bansali's comment with regard to the taste and delicacy of malai...an old english adage: the taste of the pudding is in the eating so close your eyes and chew and taste the malai and you are sure to gain a few grams of weight.The quantity being very less, you would not be able to prepare mawa based products like gulab jamuns or burfi. more  

Heat the malai in a pan over mild flame. After some time the malai will convert to ghee with a small residue which will taste like mava. The ghee will have typical pure ghee smell.This will give you an idea if the milk is not adulterated with any thing but water. more
